Spicy Misal Pav with Buttermilk

Breakfast just got a whole lot better with this popular Maharashtrian dish Misal Pav. It consists of Misal which is a spicy curry usually made from sprouts, and pav which is a type of Indian bread roll. It is easy, delicious and healthy.
Misal Pav contains a quick 30 minute recipe, no wonder why it is a go to meal for many people. This spicy dish is served with chilled Buttermilk for good digestion and to prevent any health problems due to spicy food.
Ingredients for Misal Pav:
Good news- The ingredients are minimal and easily available in supermarkets or grocery stores nearby.
*The ingredients mentioned below are provided with proper quantities for 5 servings of Misal Pav.
2 bowls of Mixed sprouts, Ginger Garlic paste, 2 onions, 1 tomato, 1 green chilli, Curry leaves, coriander, Lemon, Pav, Farsan.
Rock spices: Half Cinnamon, 2 Elaichi, Cardamom, 2 Tej Patta.
Spices powders: 1 teaspoon Turmeric powder, 2 teaspoon Coriander Powder, 2 teaspoon Red Chilli Powder, 1 teaspoon Garam Masala, 1 teaspoon Onion Garlic Powder.
Jeera, Mustard Seeds, Hing, Oil, Salt, Gram flour, Jaggery.
Preparation of Misal Pav
Put a container on medium flame, add 3 tablespoons of oil.
After the oil gets heated, add
Mustard seeds
Jeera
Hinga
Curry leaves
Saute it well.
Add chopped Onion, and 1 tablespoon of ginger garlic paste once the onion gets softened.
Add the rock spices. Add chopped tomato.
Once all the above ingredients get softened and get a thick smoothie-like texture, add the masalas and mix it well.
Tip: Adding a teaspoon of gram flour in the mixture gives it a proper thickness and a good taste. It is an optional step.
Add mixed sprouts in the mixture. And keep water in another container for boiling.
Add boiled water, and give it a good mix.
Add salt as per taste.
Boil the gravy on high flame.
Add chopped coriander once Misal is perfectly boiled and cooked.
Ingredients for Buttermilk:
Chilled water or Ice cubes, Curd, Green chilli, chopped coriander, roasted jeera powder, black salt, mint leaves, grated ginger.
Preparation of Buttermilk:
Add chilled water/Ice cubes, curd, green chilli, coriander, roasted jeera powder, black salt and ginger all together in a mixer jar.
Pour it in a glass and garnish it with mint leaves and coriander on the top.
Serving method:
Put a handful of Farsan in a dish
Add Misal (spicy gravy) on it
Garnish it with chopped Onion, Coriander, and add Tari (separated oil layer from the spicy curry)
Keep a half cut lemon,chopped onion and Pav along with it and serve it with a glass of chilled Buttermilk.
